Using your own vineyard, controlling the irrigation, using the best techniques in viticulture and having the best grapes are the fundamentals in order to make the “best wine”, as Enrique Mendoza would say.
One you have achieved all of above that is when you start applying the most refined techniques to determine its evolution: a thorough control of the plant, following scientific parameters based on dendrometry ( to control the hydraulic stress in plants) and precision grape growing.
We produce very natural grapes, without the use of herbicides or insecticides, fed only with compost.
The ageing is done in specially selected oak barrels from the best forests: Nevers, Allier, White American Missouri, White American Oregon, Limousin, Check or Russian.
